It is the end of lease of the Beaufort Street Institution Must Winebar. After 19 years of being a little bit of Paris on Beaufort Street, we’ve decided to call Last Drinks. Our last day of trade will be Saturday December 19th, 2020.

Chef/Partner Russell Blaikie Comments “Must has formed such a large part of my life, it’s been a gratifying experience to work with so many great people who’ve progressed to the top of the hospitality field in Australia, and many more who’ve moved into professions after spending time working in our little bit of Paris on Beaufort Street.

Our customers are the most loyal, wonderful, fun people to look after, we love them and all the vibrancy that they’ve brought into our doors week after week. There’s wonderful sentiment in the scores of comments we’ve had from them. Since the announcement we have had over a thousand bookings…and counting.

I’ve also had the privilege of being in business partnership with a bunch of great human beings, who’ve been supportive, caring and always in to lend a hand. I’ll also mention our landlord, he’s provided great support to the business in this year of COVID-19.”

We’ll be retiring iconic dishes that have been integral to the Must experience for almost two decades like our charcuterie plate & blue manna crab angel hair pasta.

So grab a seat at the bar or book a table in the bistro to share some more good times with great wine and classic food. Come along with your friends, your loved ones and your colleagues, and celebrate the part Must has played in your lives over the past two decades… we certainly will be!
